Calculated Nutrition Labeling
With new legislation in place, more food manufacturers are required to label their food products in order to conduct business. As it is a necessity for a large part of the food industry, manufacturers should seek assistance in verifying their labeling requirements. See FDA guidance on food labeling.
Before Requesting a Nutrition Panel:
- Be permitted to sell your product (required trainings, inspections, etc.)
- Your recipe must follow the FDA serving size, or RACC (Reference Amounts Customarily Consumed), for your product type per 21 CFR 101.12.
The FSIC provides calculated nutrition panels. This is the easiest and least expensive method. Calculated nutrition panels are generated based on reliable databanks using the recipe you provide. If a product is not in the databank, you may be asked to obtain the “nutritional analysis per 100 grams” from the manufacturer.
Laboratory analysis of products for nutritional data is more expensive and time consuming but, for certain products, is the only appropriate method. Products or ingredients such as fermented foods (yogurt, kombucha), extracts (fruit infusions), and broths/stocks all require laboratory analysis. If laboratory analysis of your product is necessary, we can offer laboratory suggestions.
FSIC provides the nutrition panels in the standard vertical format. Contact the Kentucky Food Safety Branch for approval of alternative formats (examples of different label formats). For single nutrition panels, nutrition fact calculations are generated approximately 6-8 weeks from the receipt of a completed request form and all supporting materials.
